I missed “Meatless Monday”. I also missed “Taco Tuesday”. There is no fun alliterative food phrase for Wednesday, so this was our recipe of the week. Or, I really wanted to use all caps and ‘scream’ RECIPE OF THE WEEK because it was that good!
Last night I made Salsa Verde Lentil Tacos with Mango-Pomegrante Pico. These flavors together were amazing and the whole thing was so easy to make, including the from scratch salsa verde. The only shortcut I took was to use the already cooked lentils from Trader Joes (found in their produce department). Note: I always use the pre-cooked lentils from Trader Joe’s when I make them for dinner, BUT when I make my dog’s food, I cook the lentils myself. Weird? Kind of.
Anyway, back to the tacos. The salsa verde had the perfect amount of spice, and the sweet/tart Pico was so delicious. I added a little bit of feta to my tacos because, let’s face it, feta is delicious. It was a winner in our house…except with my 3 year old. She had a quesadilla.
Quick, run to the store to get the ingredients and get this meal on your menu/dinner table ASAP!
