“Is this a Blue Apron meal? The flavors are so good.” That’s what the hubby said after his first bite of the meal. Nope…this was all me. Well, me and my friend Pinterest. Here’s my “Recipe of the Week.”
My hubby loves steak. I think it’s a guy thing. My mini LOVES steak (especially the chipotle marinated skirt steak from Trader Joe’s). What’s not to love, right? Well, as we watch our healthy eating habits around here, red meat is usually a once a month kind of thing. Last night I think I won at life with this meal.
Brown Sugar and Garlic Flank Steak w/ Chimichurri & Warm Brussel Sprout Salad
For the flank steak, I followed this recipe. I let it marinate in the fridge for about 5-6 hours.
The chimichurri (aka. the real star of the meal for me) was made with just parsley. You see recipes that have parsley and cilantro, but we don’t like cilantro in this house so all parsley it was. Plus, I had almost an entire bunch leftover from the batch of dog food I made the other day. What was also great about this chimichurri sauce is that my mini did it ALL by herself. She took off the leaves of parsley, cut the green onions with scissors, peeled the garlic, measured the spices, and even managed the food processor. All I did was measure out and pour in the oil.
The brussels sprouts was a creation of “what do we have in the fridge”. Another winner.
We also served a plain sweet potato on the side (not pictured, because it’s not exciting).

Side note: Everybody’s belly was happy after this meal. Well, except my picky 3 year old toddler. She ate some steak and a bit of sweet potato…then asked for a quesadilla. At least she tried everything on her plate before turning her nose at it .
